Mixed fruit Sago Recipe
1 can lychee
1 can toddy palm sugar
1-2 cups chopped strawberries
1-2 cups chopped cantaloupe
500 mL coconut milk
200 or half can evaporated milk
1/4 cup uncooked Sago (Tapioca pearl)
2 cups water

Instructions
1. Boil 2 cups of water with high heat. Once the water is boiled lower to medium heat and cook the sago pearls for 15 minutes (stir every once is a while ) or until they become mostly translucent. Turn the heat off then cover the lid for 5 minutes. After that rinse the cooked sago with cold water or mix it with some maple syrup to prevent them from sticking too much.
2. While the sago pearl is cooking, chop strawberries and cantaloupe and put them in a large bowl.
3. Combine the fresh fruit with canned fruit of your choice. We found that the combination of Toddy palm sugar and lychee work great. We believe that rambutan and Jack fruit will work as well. Use the syrup from the cans as well so that you don’t have to make your own.
4. Add evaporated milk and coconut milk followed by the cooker sago pearls.
5. Refrigerate or serve in cups or bowls with some ice. We found that if you chop the fruit very small, this combination makes amazing refreshing drinks for the summer too. Enjoy !
