This cucumber salad is tangy and refreshing. It's also easy to make when you run out of time or simply for lazy days. Adding perilla leaves to this cucumber salad is fantastic - the combination of the fresh cucumber taste and the herbiness of perilla leaves is just *chef's kiss*
Recipe
1 (massive) cucumber or 2 regular sized
1/2 tbsp gochujang
2 tbsp gochugaru
2 tbsp soy sauce
2 tbsp honey
2 tbsp vinegar
1 tbsp sesame seeds
coarse salt
sliced scallion
sliced onion
sliced perilla leaves
1) Start by slicing the cucumber. Transfer the cucumber slices to a bowl and add 1/2 tbsp of coarse salt. Mix well and let it sit for 10 minutes.
2) Cut scallion, onion, and perilla leaves into slices/thin strips.
3) Remove excess water from the cucumber slices. Add gochujang, gochugaru, soy sauce, honey, vinegar, and sesame seeds. Mix well.
4) Add the sliced scallion, onion, and perilla leaves. Mix again. Serve with rice and enjoy 🥰
