Mediterranean Orzo Pasta 🌿
Ingredients:
-1/2 box of orzo
-protein of choice (using extra firm tofu, cubed)
-1 cup dried porcini mushrooms, soaked in warm water and diced
-1/2 of a white onion, thinly sliced
-1/3 cup of black olives, halved
-4 garlic cloves, minced
-1 tbs capers
-fresh or dried herbs of your choice, finely chopped (rosemary, thyme, oregano, parsley, basil, etc.)
-1 tsp red chili flakes
-salt and pepper to taste
-splash of white wine
-1/2 cup of mushroom water
-juice of 1/2 a lemon
Instructions:
-soak dried mushrooms in 2 cups of warm water and allow to sit for 15 minutes; dice the mushrooms and set the mushroom water aside for later
-cook orzo according to instructions and set aside
-in a nonstick pan or pot, sear and sauté your protein of choice until cooked
-add in onion, garlic, mushrooms, fresh and dried herbs, chili flakes, salt and pepper, and sauté for 5-7 minutes until cooked and cohesive
-add splash of white wine and allow alcohol to evaporate for 1 minute
-add in olives, capers, orzo, lemon juice, and 1/2 cup of mushroom water from the first step
-mix together and garnish with fresh herbs
-divide into meal prep containers; store in the fridge for up to 3-4 days or in the freezer for several months
