And because farmland isn’t a full block, you can put some hoppers under them to pick up the crops for you!

Or just use dispensers dispensing water or make pistons hold back some water, that you can release when it's time for harvest. You can even pit a hopper collection system if you do this instead.

Especially if you can automate the process or something, maybe by having it act double as a villager farm. If I recall, villagers have a limit to their inventory space, so some crops should be harvestable with an automatic collection system.
