Scallion Oil Noodles in 5 minutes

Ingredients
240g of Chinese noodles
6 green onions/scallions (pat dry and julienned)
3 cloves of garlic
4 tbsp of soy sauce
2 tbsp of dark soy sauce
2 tbsp of hot sauce
2 tbsp of brown sugar
Oil, for frying
Sesame seeds, for ganish

Steps:
1. Bring a pot of water to the boil and cook your noodles according to packet instructions. Drain it and set aside.
2. Trim the ends off the green onions then cut into 2 inch pieces, separate the whites from the greens and julienne scallions. Set aside
3. In a small bowl, combine soy sauce, dark soy sauce, brown sugar and CHIN-SU hot sauce.
4. Heat the oil to medium heat and add in the white parts of the green onion. Fry for 2 mins then add in the green ends and fry until golden brown. Set aside
5. Then, stir fry the garlic until fragrant. Pour in the sauce and mix well to combine with the oil. Bring them to the boil then add in your noodles and toss until it is evenly coated.
6. Serve with the crispy green onions and garnish with toasted sesame seeds. Enjoy!
