It’s nice to see a meal plan video (even from years ago) mentioning getting bored eating the same thing repeatedly! Looking for meal prep for one inspo is so hard now, because everyone is just eating the same chicken/rice/roasted veg meal 2 times a day for 7 days straight. 😢

When I used to live alone I would cook twice a week and treat myself to a one take out dinner once a week. I would stock my fridge with black berries (they're my favorites) cottage cheese, eggs, mangoes, and pineapple. My one big endulgence was Gelato. I had a budget of $50 per week. That was 5 years ago. These days things are so much more expensive.

I live on my own and I'm on a tight budget. I also have to eat a gluten free and dairy free diet due to allergies, and having 2 autoimmune diseases I have to eat pretty healthy to keep my energy levels up. Because of this I find grocery shopping to be exhausting. I always do lots of research beforehand online to compare prices. I also find that stocking up on canned goods stretches my trips to the store out. Produce can be pricy and every time I buy fresh it goes bad because as one person I can't eat it fast enough. But I need my greens badly, so I always have canned green beans, peas, chickpeas or carrots for convenience. Also frozen fruits and greens for smoothies. This way my produce last my longer and I don't waste it, it actually gets eaten. If I crave something fresh I go and buy just one, bananas and apples are the exception. I also like fruit cups and craisins. I go by two rules when I shop, protein packed and anti-inflammatory foods. I make sure I have protein for every morning. Whether its precooked sausages or hard boiled eggs. I also keep bags of nuts and protein bars for quick grab and go. I find a lot of good foods and other household items at the dollar store and this stretches my budget before going to Wal-Mart. I always buy basics and cook at home and for sweets I stick to dark chocolate. I try to cut back on sugars because it makes me sluggish. When buying snacks I always try to keep it to 6 ingredients. I also buy generic foods, often they taste the same. When shopping for anything I always look for the most product for the lowest price, and read all labels first. Instead of buying Starbucks every morning I make my own coffee and lattes in the morning and I also save this way. I pack lunches the night before for work and always have an abundance of healthy snacks to graze so I don't cave and buy that candy bar. When I do things this way first, I always find a little extra for certain treats or even going out from time to time.

My wife and I always cook double and the left overs are an awesome lunch the next day. Singles should always cook for two for the same reason. I generally don't like to have leftovers more than once or twice, but in the past few weeks I made both spaghetti with meatballs and the next week Sicilian pizza that we had 3 times each and we were sorry when they were gone...both have the same homemade sauce. My wife has been asking when I'm going to make spaghetti again and Friday is always pizza and movie night. Tonight is hamburgers with the other two for lunch tomorrow, next comes a dinner salad with chicken, a hard boiled egg and a buttered roll, then pork chops with a sauteed mushroom and onion pan sauce...wonderful lunch the next day. Broiled cod with potato cakes (no leftovers) and then thin crust pizza with leftovers for the next day or so. Sundays we usually make 2 whole chickens and then make soup with the carcasses and sandwiches for the week or perhaps a chicken pot pie, chicken wraps, or several other options. Good eats always make great leftovers...they're even better when you reheat in the oven rather than a microwave.

Turkey meatballs & tacos 😋 I do the same when I'm alone! There's particular foods that I love that my husband couldn't care less about so I take advantage of it lol! 22nd floor, that explains the view in the other video. That little cart is a great idea, I need one myself! And how do you dry your tofu out? I love it, but the process of preparing it sometimes discourages me from wanting to make it.

Devise one meal that is nutritionally complete and inexpensive. Eat this same meal every day. If this sound boring, it is because you do not have enough other interesting things going on in you life.
