Very creative! If someone didn't have oil, the chickpea liquid is a great oil substitute for dressings and baked goods.

This made me feel good about my family's grocery budget for a family of 7, the youngest being 15, we spend decently lower than that per person per day, and we eat really healthy. Here I thought I was overspending.

Hi Mindy! I have a challenge idea for you; it comes from my own needs and where I live.

First, I have multiple chronic illnesses and, in my area, all I can afford to rent is a studio apartment. In my kitchen is a dorm fridge where food spoils quickly- no freezer, a small amount of cupboard/ drawer space, a microwave, crockpot and single burner hotplate. I also own one medium saucepan with a lid and a nonstick frying pan.

Second, I'm allergic to eggs, nightshades and wheat/ gluten.

Third, Safeway and Wal-Mart are my only shopping opportunities.

My challenge is: after paying rent, cellphone, past medical bills and all my other bills, I have just $90 for a whole month and that has to cover doing laundry {I don't have a w/d which means going to the laundromat/ hand washing what I can- it costs $8 a week}, clothes or shoes or an oil change... so after all of those miscellaneous expenses- if they don't happen all in one month, I'd have roughly $56 total to spend on food, and if I did have to do an oil change that month, I'd have no food money left at all.

I do utilize my local food pantry, however with such a small space, no freezer and with my allergies to so many foods, I mostly get things like a pound of rice, pound of beans, cans of whatever don't contain my allergens, once in a while they'll have cheese, butter, oil, etc.- and that has to last a whole month, which is obviously very unrealistic even if you eat tiny amounts and drink lots of water to help you 'feel full'. So, what can I spend my money on to supplement those staples?

Living on just $14 a week is getting really tedious and kind of boring at the same time! Would love to hear some ideas!

I've always been intimidated to temper eggs and turn them into a sauce (like carbonara) and I know you've done it on multiple videos before but this is the one that finally convinced me. I've been successful quite a few times now. Such an easy way to add additional protein and calories to a simple meal (like Ramen). The other day I had nothing but cold leftover spaghetti when on my own for dinner, and in just a few minutes I had a satisfying soup made from pasta, bouillon, a few simple seasonings, cheese and 2 eggs. Had I added a few vegetables it would have been a complete meal. As it was, it was very satisfying and satiable meal; and not intimidating at all. Thank you, Mindy.

Nice job on the pasta salad! Doing a segment on homemade dressing from pantry would be useful. Once i started that and realizing flexibility I didn't go back to bottled.

Mindy, I really believe that if you are looking for some new inspiration and increased subs, that looking at grocery stores in other cities and towns, states is an option you should pursue. On my part, I watch you for your meal plans, budget videos etc.

I've enjoyed making some of your recipes! I sometimes travel for work, but it'll be for extended periods of time. So I have access to a kitchen but don't want to purchase a whole pantry of goods! I've found some of your recipes are great because I up everything I buy

the recipe I use for
Greek Dressing
¼ cup red wine vinegar
2 cloves garlic, minced
1.5 teaspoons each oregano and kosher salt
1 teaspoon or more Dijon
½ teaspoon each freshly ground black pepper and honey
½ cup EVOO
Shake to combine all together.
If using cruet, add vinegar to V line, then all remaining ingredients except oil, then add oil to O line. Shake to combine.
