CHEAP GROCERIES FOR THE WEEK + My Weekly Meal Plan & Tips for Produce Storage!

Grocery haul: (for the meals on my plan)
-8 russet potatoes
-2 packets mashed potato flakes
-2 cans black beans
-6 cans green beans
-2 packs tofu
-2 boxes pasta
-8 packs yogurt
-1 lb baby carrots
-3lbs onions
-2 packs mushrooms
-2 cans olives
-2 packs protein pancakes (freezer section)
-1 box protein cereal
-2 packs english muffins
-1 pack squeezable avocado
-18 eggs
-6lb grapes
-1 quart almond milk
Meal plan:
Breakfast:
Avocado + egg english muffins
Lunches:
Pasta salad:
2 boxes pasta (cook according to box directions)
2 packets tofu (cut into small cubes, marinate with italian dressing overnight)
2 red bell peppers
2 cans black olives, slices
1/2 onion (option)
Toss all ingredients together, refrigerate and eat cold!
Dinners:
Baked potatoes with mushroom gravy (+ I add lentils for higher protein!)
Lentil shepherds pie:
+ Add 2 cups cooked lentils and 2 cups frozen mixed veggies
(you can also add 2 tbsp tomato paste if you'd like)
Top with 1 packet of mashed potato flakes prepared, bake in oven at 400 degrees for 20 minutes or until mashed potatoes have a nice almost crispy top
2 Ingredient bean burgers:
1 packet or 1 cup mashed potato flakes
1 can beans (any type) drained but not rinsed
Mashed together with a fork and roll into ball than flatten into burgers
Cook 3-4 minutes each side
You can add any seasonings or veggies you'd like to the burgers before cooking!
We like to change it up but some of our favorites are black beans, corn and chiles; mushrooms onions and black beans; pinto beans with onions (skies the limit with what to add!)
Carrot cake snack bites that I mentioned in the grocery haul!
-1/2 cup nut butter (any)
-2 cups quick oats
-1 cup raisins
-1 cup shredded carrot
-2 tbsp maple syrup
*Blend all ingredients together in a food process until smooth, roll into bite size balls and refrigerate!
