How to make a Certainly! Here's a basic recipe for homemade marshmallows:

**Ingredients:**
1. 3 packages (or 3 tablespoons) unflavored gelatin
2. 1 cup cold water, divided
3. 1 1/2 cups granulated sugar
4. 1 cup light corn syrup
5. 1/4 teaspoon salt
6. 2 teaspoons vanilla extract
7. Powdered sugar (for dusting)

**Instructions:**

1. **Prepare Pan**: Lightly grease a 9x13-inch baking pan and dust it with powdered sugar to prevent sticking.

2. **Bloom Gelatin**: In the bowl of a stand mixer fitted with the whisk attachment, combine the gelatin with 1/2 cup of cold water. Let it sit while you prepare the sugar syrup.

3. **Make Sugar Syrup**: In a saucepan, combine the remaining 1/2 cup of water, granulated sugar, corn syrup, and salt. Cook over medium heat, stirring constantly until the sugar dissolves. Then, increase the heat and let the mixture boil without stirring until it reaches 240°F (115°C) on a candy thermometer.

4. **Mix Marshmallow**: Turn the stand mixer on low speed and slowly pour the hot sugar syrup into the gelatin mixture. Once all the syrup is added, increase the speed to high and whip until the mixture becomes very thick and lukewarm, about 10-15 minutes. Add vanilla extract during the last minute of whipping.

5. **Pour and Set**: Pour the marshmallow mixture into the prepared pan, spreading it evenly. Dust the top with more powdered sugar. Allow the marshmallows to sit uncovered for at least 4 hours, or overnight, until set.

6. **Cut and Coat**: Dust a cutting board with powdered sugar. Remove the marshmallow slab from the pan and place it on the cutting board. Cut the marshmallows into squares or desired shapes using a sharp knife or cookie cutters. Roll the cut edges in powdered sugar to prevent sticking.

Now you have homemade marshmallows! Enjoy them in hot cocoa, s'mores, or any other way you like.

I used to do this with my fingers, pull it apart. Twist and together, looked like taffy after awhile. But I'm not sure this is fluff, I think marshmallow creme and fluff has air incorporated

That's too thick because of the gelatin.... Marshmallow fluff shouldn't be elastic. It should be easy to scoop like butter but still have the same fluffiness and airiness as a regular marshmallow. That's why it's made with Italian meringue. (Chickpea water is a great affordable option instead of egg whites and is a great vegan substitute!)

Here's an ACTUAL marshmallow fluff recipe:
•whip two large egg whites

* (or substitute and measure out Aquafaba, that chickpea water substitute i mentioned with the same amount as the needed egg whites. Typically two large eggs is 90g). *

•whip it with a pinch of salt till it's frothy.

•heat two cups of sugar with one and a half cups of water on medium low heat till it's at a stage where you can pick up a little bit on a spoon, drop it in cold water and be left with a SOFT ball of sugar, not hard and crunchy. Make sure to NOT stir as it will disrupt your sugar syrup and can crystalise. Should take around 7-10 minutes. Leave it on the heat longer if you're still not getting a drop of syrup setting into a soft and squishabke droplet.

•slowly pour the hot sugar syrup in the egg whites while simultaneously whipping with the hand mixer till it's all in there. Whip it till a thick Italian meringue is formed. Takes around 8-10 minutes for the perfect marshmallow fluff. After it's all whipped up, you could either A) leave it plain and store it in a jar/airtight container in the fridge for up to 2 weeks. or B) add some flavouring and colour before letting it chill in a container. I recommend freeze dried strawberry powder!
