In this video I'm going to show you how to make american cheese at home, and then give you some tips and tricks on how to use it. I am even going to show you how to make a sliceable beer cheese using a slighlty modified american cheese recipe.

PSA: you can make your own sodium citrate at home! All you need is to heat some baking soda with some lemon juice in a pan and it will form the sodium salt. Adam Ragusea has a good video about it.

Hey! I'm Norwegian and our Grilled Cheese sandwiches are nothing like the American one. It's usually made in the oven, with a slice of ham and only one slice of bread. Growing up on it I loved it, my only wish for a Christmas present when I was 10 was a Wiener Toast machine (14 years later and I still have it), but then one of your shorts showed up some months ago and now I'm hooked. Been experimenting a lot and watched all of your vids and shorts to pick up on various tips and tricks from the grilled cheese king. I'm determined to make the best grilled cheese sandwich any Norwegian have tasted and to be fair I'm pretty sure I'm already there as again the norwegian one is not really that great.

Can't wait to try out making this cheese! I'm sure American cheese is abundant in America, but here it's nigh impossible to find. However, I'm wondering about the expiration date on this homemade American cheese. Will it last a while or expire in 2 weeks? Even cheddar can become expensive here so I want this cheese to last for as long as possible without losing its taste, texture or go bad. I know a freezer would be the obvious choice, but I don't have a freezer and I don't want to defrost the cheese for hours after work when I'm in the mood for grilled cheese. Any tips on making it last longer or storing?

Btw, know this is a long comment already, but I've been using this Scandinavian cheese called Ridder Ost as my flavor cheese. It doesn't melt that well, but it adds a lot of flavor and I typically mix it with other less pungent cheeses just to get that melted cheese pull. I think it will go great with American cheese, see if you can find it if you want.

sodium citrate can be made at home with citric acid and baking soda. It can also he found as an ingredient in alot of club sodas. You can also replace the sodium citrate with mustard and it should work

I love American cheese— even more so mixed with other cheeses in Mac and cheese. Just FYI: obviously it won’t compete with a homemade recipe, but the unwrapped American does taste better than the plastic kind. It’s usually referred to as Deli Style (if you don’t actually buy it from the deli)

You dont have to buy sodium citrate. You can easily make it yourself by dissolving some baking soda in warm water and mix it with citric acid/lemon juice until no more bubbles appear after mixing. Adding the acid in small quantities ist advised here as to much acid would be well to sour. Having a bit of citric acid extra in the cheese ist actually common with american cheese as it helps the cheese staying fresh.

Okay the butter side of the bread is what you grill where I come from lol. I can't knock how your sandwich turns out. The browning is even and perfect color. I make cheese and when my cheese comes out too dry or crumbly, I save it with the sodium citrate. I make the sodium citrate with baking soda and citric acid. The last processed cheese I made was pepperjack that I made and was too crumbly. It came out great as processed cheese.

If we can replace the liquid with other stuff, from milk, to beer, to ???, what if we used orange juice or lemon juice, something with a high citric acid content? Start off with a little, since I don't know how soupy it could turn out. I love orange and strong citrus flavors. Maybe marmalade?
