I have chickens and we hard boil a lot of eggs, it isn't hot or cold water that makes them peel easier it's actually the age of the egg that makes all the difference. The older the egg is, the easier it is to peel. if it's a very fresh egg it won't peel easily. Inside of each egg there is a membrane between the whites and the shell. The shell of an egg has thousands of tiny pores, if this egg has been washed it will remove the bloom (which is an invisible protective film that is created right when the hen is laying the egg) and there will be small amounts of oxygen that will leech in through the pores over time. That oxygen will gather between the shell and the membrane on the inside, forming an air pocket. The older the egg is the bigger the air pocket. When you boil the egg that oxygen in between the shell and the membrane will expand, separating the membrane from the shell a little bit. Which in turn makes it easier to remove the shell from the egg.

It’s the Instant Pot that makes the eggs easy to peel. I like mine cooked hard so I do 6 minutes high then unplug and wait another 6, then release and drop into an ice bath. Perfect every time!
