While deciding what to make for this episode of Cooking the States, one food that has really caught my attention is bison. Not only is it known for being healthy (just watch any bodybuilder meal prep video out there) and tasty, but it also has a rich history and cultural significance in this state. From the days when Native American tribes relied on bison for their survival, to the present day, where it's become a staple of many Montana restaurants, bison truly is an integral part of the state's food culture. Butter Basted Bison:
Ribeye or Sirloin
Butter
Thyme
Garlic

Huck Sauce:
1 cup Huckleberries, fresh or frozen
½ cup Dry Red Wine
½ cup Beef Broth
2 Tbsp Unsalted Butter
1 small Shallot, minced
2 Garlic cloves, minced
1 Tbsp fresh Thyme leaves
1 Tbsp Balsamic Vinegar
1 tsp Honey
Kosher Salt & Black Pepper, to taste
¼ tsp Xanthan Gum (optional)

Fries are more appropriate than you think. Montana grows a lot of seed potatoes that Idaho buys and grows into their famous potatoes.

So saw this notified/recommended... And when my grandfather was alive he lived next to a bison farmer in Missouri and he'd give my stepfather a whole freezer sized bison brisket it would last us four months minimum and absolutely loved to make bison chili when growing up and cooking it myself when a teen

Adam- As always, thank you for posting interesting new foods & recipes for me to try. I've attempted to do the butter saute but failed miserably. Apparently, I wasn't using enough butter; thanks for showing me the correct way to do it. I adore using fresh fruits as a sauce for red meats, they really bring out & complement the flavor of the meats. I haven't yet tried bison but I'm definitely going to ask for it at my next visit to the butcher. Thanks again.

Adam, thanks so much for this. I'm probably wrong but I believe that is the first time you've explained basting a steak (or any other pan sear). Love it! My family doesn't like buffalo or lamb-- two of my favorites--so fo Father's day I'm going to make a Buffalo Ribeye! Been a subscriber for a while now. You're doing great. All tge best!

When I lived in MT They had bison ground beef in the local supermarket. Mixed in some worcester, hot sauce, and the other burger ingredients and it was absolute 🔥.

Am from Montana. Huickleberries are amazing. We have them in everything here. From pies, to shakes, to BBQ sauces, you name it. Bison is awesome, but even here where they are farmed still stupid expensive. I buy it every now and then, but it's gone up to about $12-$15/pound for even ground bison :/

Bison is amazing i just wouldn't pay a premium price for a bison hamburger over a regular beef hamburger.
