These easy and healthy pumpkin oatmeal muffins are super simple to make and taste delicious. They are the perfect grab-n-go breakfast or afternoon snack.

BAKED PUMPKIN SPICE OATMEAL MUFFIN CUP RECIPE
3 cups rolled oats
1 teaspoon baking powder
1.5 teaspoon pumpkin pie spice
1/2 teaspoon kosher salt
1/2 cup pumpkin puree
1/4 cup maple syrup
2 pastured eggs
1.25 cups milk (I used almond but you can use any you milk you prefer)
1/4 raisins
1/4 pecans

Pre-heat oven to 350 F and grease a 12-cup muffin tray (I used cooking spray to keep it easy but you can use butter or coconut oil as well).

In a large bowl combine all of the dry ingredients; rolled oats, baking powder, pumpkin pie spice, and kosher salt. Mix well and set a side.

In a medium bowl, combine pumpkin puree, maple syrup, eggs and milk. Whisk together and then pour the wet ingredients in to the dry and stir until well combined.

Gently mix in the pecan and the raisins and allow to sit for 5 minutes to allow the dry oats to absorb some of the liquid.

Evenly divide the mixture amongst the muffin cups and pop in the oven for 20-25 minutes or until cooked through and golden brown over the top.

Cool and enjoy!

Hi Dani. I love your recipes and would love to try this one too. Unfortunately, there is no pumpkin pure in my country available, so with what could I substitute it? Maybe apple sauce, but would the same amount work do I need more or less? Your answer is very well appreciated. <3

These muffins are so good! I added 1/4 cup swerve for more sweetness. I also added walnuts and cranberries. Then my husband wanted something else beside pumpkin so I made apple and pecan ones. Cooked the apples and added cinnamon then mashed them up and added to your recipe instead of pumpkin. This can made changes up so many ways!

Never saw this channel until the other day, watched this one, grabbed the ingredients from the store the other day, and put them together this evening. The full portion fit into a 6x cup tray I have, the big muffin size, perfectly. THEY ARE SOOO GOOD! Smear some butter on top when they are still warm.
I used whole milk (unpasteurized). Also Grade B maple syrup.

These are delicious! I baked these up and they turned out great. Now they're a regular item on the menu. I love how you always note possible substitutions for fitting one's particular diet.
Here are my changes:

- Ground up the oats beforehand to make the batter a little smoother
- Subbed out the maple syrup for 1/2 c of xylitol for lower sugar
(and added 2 more Tbsp of pumpkin to make up for the lost moisture)
- Subbed out the raisins for coconut chips - also for lower sugar
- Added a tsp of vanilla extract
One time I was out of pumpkin, but subbed some steamed, mashed butternut squash and I couldn't even tell much of a difference.

I also froze one and it was fine, but no need to freeze 'em cause they go pretty fast :-).
