Easy Roast Potatoes

This is my everyday roast potatoes recipe. No-nonsense, quick prep, with great garlic-thyme flavour. Fresh herbs are lovely, though dried can be used in a pinch. Don't make the mistake of using minced garlic. It burns!

My everyday Roast Potatoes

1 kg/ 2 lb baby potatoes, (or other small potatoes), cut in half – large ones cut into 3
4 tbsp extra virgin olive oil
1 tsp cooking/kosher salt
1/4 tsp black pepper
5 garlic cloves with skin on, smashed to burst open but mostly stay in one piece
5 thyme sprigs or 3 rosemary sprigs (or 1 tsp dried, toss in halfway through roasting time)
Finely chopped parsley or extra thyme sprigs, optional decoration

1. Toss potatoes in oil, salt and pepper, then toss through garlic and thyme. Roast 60 min at 200°C / 400°F (180°C fan), tossing halfway, until golden outside and soft inside. TIP: Place cut face down for last 30 min for best colour! SERVE!

They look really good. In the U.K (arguably the home of roast potatoes) we use any generic potatoe, peeled and cut to a similar size as shown here. Then boil in water for 15 to 20 minutes, drain and put onto a baking tray with with plenty of oil and herbs/garlic/salt and pepper. Stir through, place in the oven for 15 minutes at 200 Celsius then stir and cook untill golden brown (approx 15 more minutes).

I always do my roasties at 200°c or 180°c fan assisted or gas 6.
But its always good to just check during the latter stage of cooking to see if they are to your own style.
