It's my first visit here at Todd's Kitchen and I really like to stay here. Making soy milk is pretty easy process indeed and cheaper as well. I'm so excited to give it a try. Thanks.

you can also eat that "skin" that forms on top of the liquid while it simmers, the skin is call "yuba" and it's very nutritional (and expensive)

so much creamier than store bought too! (and really good with honey!)

Just tried this, it turned out quite good. First attempt was a failure though, as I don't have a cheesecloth, so I used a towel, and the soy milk tasted like laundry detergent, lol. Second attempt I only used a strainer, and it turned out quite well. I then mixed it with banan and chocolate.

Now the tricky part is to buy organic dried soy beans, I'm not sure the brand I buy is organic, but it could be.

Then, heat up the milk to simmering, add lemon juice or nigari, which curdles the milk, and you've got tofu.

This is exactly the same way as my grandma made soymilk for me when I was little. You just remind me my precious childhood memories. Thank you.

Thank you :)
It is good in the fridge for three days. It does not last as long as the store brought because there are no preservatives. Also as i said in the video you can just throw it in your garden. Some people use it but i never have.

I tried blend > filter > cook, blend > cook > filter, and cook > blend > filter.  They taste similar as long as you have a high quality blender like vitamix or blendtec (lower quality blender can't get the favor out as well).  And I never bother removing the skin from the soaked bean.

I find cook first (of course use pre-boiled water and sterilize the cheese cloth) is easier and I don't have to worry about the film forming issue.

Yes you can use it. The leftover pulp is called "okara" and is very nutritious. It is full of fiber and nutrients. Throwing it out is such a waste. It can be mixed into almost anything for added protein, fiber, etc. I mix mine into my homemade granola just before it goes into the oven to bake. It can be stirred into sauces, puddings, bread dough, cookie dough, you name it.

don't forget to add a pinch of baking soda then it won't curdle in your coffee

I just made this in my kitchen in Bali. Works perfectly, but as with all soy milk it is better with some sugar added. Now I am off to make tofu from the soy milk, and with the left over beans I am planning to give tempeh a go.

Hello Todd, one question : have you ever tried to make soy yogurt from that soy milk ? If so, I really LOVE to see the full recipe ! By the way - soy yogurt vs cow yogurt is even more expensive than soy milk vs cow milk (but indeed more nutritious as well !)...

Just add 4 drops of “Stevia" as a sweetner and half a spoon of valilla extract, I just had a glass of soy which I bought from a Vietnamese Tofu shop opposite Hong Kong market on Ballaire in Houston Texas, I paid $3.50 .for a gallon. I am going to make my own . Thanks for the Video Buddy ! (I am a borderline diabetic)

It is water that has been filtered to remove chemicals, minerals and sediment. Most tap water in the US is filled with things like chlorine & fluoride, etc. You can buy plastic pitchers that have built in filters inside the pitcher. You just have to change the filter periodically. There are even some filters that can be attached to your kitchen faucet.
