I’m not above opening a can of tomatoes, or jar of prepared sauce, but when it’s the middle of fresh tomato season, and the vines in our garden are heavy with this glorious fruit, all of a sudden I turn into a major food snob. Enjoy!

I made pizza sauce from my garden tomatoes, garlic and basil yesterday and canned it for homemade pizza all winter long.

It's also matter of finding something to do with the literal tons of tomatoes you've got from your tomato plants (of which you mistakenly thought 5 was a good number).

This year I canned over 150 jars of tomatoes. I did some stewed with skin and seeds. I will put in Vitamix when I use it. The sauce I pureed it all raw and cooked it down until thick and then filled my jars as sauce was boiling, thus avoiding re-boiling the jars. There was no waste and all the nutrients will be left in the sauce. It is so delicious and fresh tasting in any pasta dish! Vitamix is the best tool in my kitchen!

I never strain my sauces.
I take a blending stick to it & pulverized it.
also, I add only salt, no other herbs.
this way I have more options on how to use my sauces .
I freeze it in bags for future use.

My husband thanks you because every flat surface in our house has a tray of ripe tomatoes of every size and color and the pressure canner is still in the Amazon box laughing at me. 😣

This exactly how my nana from Italy made It is honestly the very best sauce!! Thank you for sharing chef John. My husband said I looked like a kid at Christmas when I saw my notification lol.

I can't go back to my college days of just cooking pasta and pouring (store-bought) sauce over it anymore. I have to finish cooking the pasta in the sauce whenever I can. World of difference.

I love to make fresh tomato sauce like this but I never strain it. I like the texture of the skin and seeds so absolutely nothing ever goes to waste. Delicious!
