Keto Lemon Pound Cake - Coconut Flour Cake

Ever since I created my keto coconut bread, I’ve had this idea in my head that the bread would make a fantastic base for a cake. So today, live on Instagram I thought I’d attempt to bake this keto lemon coconut cake from scratch, and it turned out perfect!

The base of the keto lemon coconut cake is deliciously moist, and by removing the baking soda, excess eggs and adding sweetener, it has become one of the best recipes I’ve ever made… under pressure.

Coconut is a superior flour replacement to work with on the ketogenic diet because you don’t need to use as much of it as you would use almond flour (another great low carb flour replacement). I always opt for ¼ of the amount of coconut flour than almond flour, using a ratio of 1:4.

I made this today and it is FANTASTIC!!! Seriously you can't tell it's Keto, gonna make it when my son comes home for Christmas, not to mention the oh so many times before then :) In the recipe it has no mention of adding baking powder just FYI and it also mentions separating the eggs.

I just tried it ! Now it’s cooling down and I already took a bit it tastes amazing! No eggy taste in it, just a stunning subtle lemony taste ! Before putting it in oven I was a little disappointed because I tasted the batter and it wasn’t sweet enough but now everything tastes great and Oh! I don’t have a small tin like him so my cake took 30 minutes to be ready! The next time I’ll put it in a smaller tin

I used 1 teaspoon of baking powder (not listed in your recipe article). The pound cake turned out excellent!!!! The frosting is delicious, thanks for the great tip about using powdered erythritol in the frosting instead of the granular version. Best keto dessert I've ever made.

I used half a teaspoon of baking powder and ground my sugar to powder using a pestel and mortar. It's in the oven, can't wait to try it.

I made this cake. After reading the comments I decided to add a teaspoon of baking powder and it turned out great. Shared with friends and coworkers and everyone loved it. This is more of a dense cake it does not have the light fluffy texture you get with regular wheat flour. But it’s still delicious.

I made this yesterday and absolutely love it! Tastes fresh, lemony and sweet and is simply fantastic. I used granular truvia (erythriyol/stevia) but for the icing I melted it into the lemon juice in the microwave before adding it to the cream cheese- super smooth frosting! I also like lemony flavours (and in Ireland our lemons are smaller than Australia, I can say from experience!) so I put the juice from a whole lemon in the cake and again in the frosting. I also added about half a tsp of baking powder which worked well. My sister has eaten almost half the cake. It’s so good I recommend locking it up! Thanks so much for the recipe!

Thanks for the recipe, I tried it and it tastes great! The only change I made was to use half butter, half coconut oil to see if it would work and it did.

I wizz up xylitol/erithritol in a coffee grinder to make a powdered consistency. It's super fast :) I must try this cake, looks amazing!

OMG 😲 gosh!! I made this and it didn’t last overnight. I’m the only keto fan in my home but between my husband and son it was devoured in no time. It was so delicious 😋 moist, and the icing was the icing on the
And as my granddaughter would say “that was the best cake 🍰 ever”!

This is soooo good! I used lard beacuse I can't consume dairy and still it turned out well. Melts in your mouth goodness. I also just made a simple lemon glaze to drizzle on top. Amazing!!!! Thank you so much for sharing wonderful recipes.
