Best Black Bean Burger Recipe on the Planet

I make this black bean burger for my wife all the time. It's one of her favorites. So I thought I would share this recipe with everyone. My wife is vegetarian, however I'm not. But this black bean burger has me eating just as much as my wife. Again please try it. Let me know.

3 TBL avocado oil
3 c mushrooms diced
1 medium red onion diced
1 yellow bell pepper diced
1 poblano pepper diced
3 TBL fresh garlic minced
1 tsp granulated garlic
1 tsp granulated onion
1 tsp ancho powder
Salt/pepper to taste
3 cups Panko breadcrumbs

Step 1:
In a 12 skillet over medium heat, add the oil and mushrooms. Salt and pepper to taste. Cook until the mushrooms caramelize, about 15 minutes. Add the onions and cook until they soften, about 5 minutes. Add the yellow peppers, poblanos and fresh garlic, cook for two minutes. Add the granulated garlic, granulated onion and ancho powder. Continue to cook until the peppers become soft.

Step 2:
Once the vegetable mixture is cooked, remove half the mixture and add to a food processor and process until smooth. Return to the rest of the vegetable mixture. Cook for 5 minutes. This helps reduce some of the excess moisture. Remove to a large bowl to let cool to room temperature.

Step 3:
Add the Panko breadcrumbs to the cooled mixture. Mix until well incorporated. Add the egg and mix well again. Start making the burger patties to a desired size.

Step 4:
Grill the burgers on medium heat 5 min per side or until it's starts to get a crust. Add the cheese, onions, tomatoes and more cheese. Cover with a lid to help melt the cheese. Remove and start building the burger.
