Pro tip: For the skirt steaks, you do *NOT* want to let them marinade "as long as you can". 90 minutes max. 60 is great. Due to the citric acid from the orange and lime, if marinade the meat any longer than 90/100 minutes, you'll end up with ceviche steak. The meat starts to get weird and you can experience some issues grilling/searing it like you'd want.

Finally, Guga cooks a meat pie a New Zealander and Australian would eat. Thanks for putting him on the right path Andy. Classic Steak and Cheese pie! And yes, most Kiwis and Aussies use tomato sauce/ketchup with their pies.

You missed Dylan Hollis, he released a cook book called Baking Yesteryear where he threw in his favorite vintage recipes into the book. If you love peanut butter cookies, might I recommend the three ingredient peanut butter cookie?

There was never a good sandwich made in history without good bread. Grew up in NY where good bread was everywhere. Moved to KY 20 years ago and had to learn to make bread to enjoy sandwiches. Took a year to finally make consistent good bread.
