*NO MUSIC* Ube Cheesecake Bars Recipe | Cooking Sounds
INGREDIENTS:
For the Crust:
1 cup Graham Crumbs
3 tbsp Flour
1/2 cup Brown Sugar
2 tbsp Unsalted Butter, Melted
1 medium Egg Yolk
For the Batter:
454 g (about 2 packs) Cream Cheese, room temperature
3/4 cup Sugar
2 medium Eggs
1 medium Egg Yolk
1/4 tsp Vanilla Extract
25 g Condensed Milk
1/4 tsp Ube Extract
INSTRUCTIONS:
1. Preheat the oven at 150° C. Line a 8x8 inch square pan with parchment paper.
2. Mix in the graham crumbs, flour, brown sugar, butter and yolk until the texture becomes sand-like. Press it down on the pan. Set aside.
3. Soften the cream cheese mix in the sugar, eggs, egg yolk and vanilla. Pour about 3/4 of the batter over the crust. Mix in the ube puree, condensed milk and ube extract until smooth. Pour or spoon over gently the first batter and spread evenly. Bake at 150°C for 45 minutes or until only the center of the cheesecake has a slight jiggle. Turn off the oven and leave the cheesecake for i hour with the door ajar. Cool completely on the counter and refrigerate for 6 hours or overnight. Slice into bars and serve cold.
