Your ratios really help a lot to understand the mechanics of seasoning. For instance, when cooking pasta, a 1% salt solution is the ideal, so it seems that one might expect the salt preferences to be universal.

This is a great video and very helpful for understanding Japanese cooking. I love learning how to cook authentic foods from all over Asia, but authentic Japanese food is one of my favorites. I would love to see more foods with okara, tofu and other veggie based or "Temple" foods, like your inari sushi recipe from the other day. Thank you for the amazing food recipes you share.

Brilliant! Really useful, all my cooking is done by easy to remember ratios. If it's not easy to remember, I drop it and find a new recipe. Thank you for the 'Seasoning Metric' chart, so easy to remember, these are going to be used often! I have one question, which I think I know the answer to, which of these 'ratios' would you use for 'oden' or 'nabemono'?
