My sister-in-law just told me she was trying to eat less meat, and was asking for recipes. I recommended this recipe. I batch cook this reciepe, freeze it and bring it to work for lunch on a regular basis. I told her to check out your Youtube and webpage as well. :)

I made Lentil soup a couple of weeks ago. It was so good! I added potatoes, carrots, butternut squash and spinach. Plus onion garlic, bell pepper and seasonings.

Thank you so much. I went and ordered your cookbook and girl you are getting me through this transition lol. I’ve made the coconut corn chowder, the lentil loaf, collard greens, the peach cobbler, sweet potato tortilla soup. Omg I’ve made the stuffed sweet potatoes and recently the black eyed pea pot pie. Everything was so good, I can’t wait to see what’s in the second book 👀. Once again thank you because I thought I was going to starve lol.

My great Aunt Ida used to make a giant pot of lentil soup and hold an open house on New Year's day. Somehow that soup brought together friends, relatives and neighbors far and wide to her tiny house in Philly.
Well "Auntie I" left me her recipe collection and I probably make a double pot each month - vegan of course. Some we serve right away, some we share with our elderly neighbors. But half of that pot I will strain and pack away in the freezer. Then when I want to make a hearty meal - defrost it and top it with a few other fresh vegetables and a big layer of mashed potatoes. Ta-da! Shepherd's Pie!

I grew up on lentils and legumes in general! Love, love, love them!
Just wanted to remind - always soak them - it makes them less gassy, easier for digestion, breaks down the phytic acid, also protein becomes easier for absorbing. I learned that from youbtuber 'Pick up Limes'
