genuine question, why is it seasoned with expensive maldon salt when kosher salt would accomplish the same task? I was under the impression that maldon is used as finishing salt for a textural element

I'm confused about the shallot/alcohol reduction. Where does it end up in the dish? I'm assuming it was added to the parfait before blending, but it isn't listed as an ingredient in that step.
