I thought I'd dedicate a whole day to making the most iconic dish from one of favorite Pixar films. Remy's ratatouille - the dish that can make even the toughest food critic cry.

Recipe adapted from Thomas Keller's confit byaldi recipe!

Perfect but I have one advice : cut the vegetables a day before, put some salt on it, spread them on the largest surface you can, and put them in the fridge overnight without lid. The fridge and salt will extract the water so the flavors are more concentrated and the final result is less soaky and more crispy.

After that, take your vegetables, press them over sink (you can also use kitchen paper). And then place them standing up on your baking dish (so there is more contact with the heat from oven), with a layer of this red sauce you made an a drizzle of olive oil on top.

Ratatouille was one of the most iconic Pixar movies. I can't believe how gorgeous and how similar this dish looks compared to the movie. Remy would be proud!

Though the film was called Ratatouille, the dish itself is actually the rather closely related (but more visually pleasing) "tian", also from Provence, in the south of France. Yours looked really beautiful.
