I think people must stop criticising. As an Indian chef, he might not be doing it in a proper or traditional way. But I am shocked by his amazing techniques. The final product looks phenomenal. Hats off to his hard work and dedication.

Not many people can blend biryani spices from scratch, especially for large servings. I would say hats off to you Chef. The plated biryani looked very good when compared to what you get served in UK restaurants!

apparently, the chef here, who is also the owner of this restaurant, Takamasa Osawa, discovered Biryani during his student years in India, he then trained in multiple restaurants on how best to make it. Then he opened his restaurant in Japan that serves only biryani during lunch time and dinner time.

As a biryani lover, I respect all forms of biryani, especially when someone outside of India or Pakistan tries to make it. I dislike when people criticize others for attempting to speak a foreign language, cook their food, or wear their attire. Food, culture, and music are meant to be shared and celebrated. I have seen countless biriyani making videos, have made countless biriyanis, and tried a lot of biriyanis from around as well.
But this is a totally new technique and approach towards making a biriyani, and that end result looks insanely good. Perfection infact. And wonderfully clean as well. The trademark Japanese way. I would love to try this someday.

Its amazing how food is an amalgamation of cultures. And I wonder if they have added a spin of their own somewhere in there.
