I think the secret of Meta Knight is that he's just like Kirby, but once upon a time, he defeated a powerful foe, absorbed its powers and simply chose not to, or couldn't, let the powers go. Maybe if a being like Kirby keeps their powers for too long, they can't be removed. Kirby's just the type to always like shifting and reverting back to his original form.
