The grape harvest in ancient Israel was in the fall. Passover is in the spring. Unfermented grape juice does not last over a week without spoiling. Only with fermentation will the juice of grapes last from fall to spring.

Also, it's only with fermentation that grape juice expands to stretch out the wine skin. That's why you can't put "new wine" (grape juice) into old wine skins. The skin has already been stretched as far as it can go, and that juice will then stretch it beyond its capacity.

Why would the man at the wedding stand up and literally say that most people serve the good wine first and then save the bad wine for last when everyone is drunk and won't notice? It was real alcoholic wine. God wouldn't have used the term wine to cause confusion in the future.

When Jesus talks about putting new wine in new wine skins and not old wine skins is because new wine skins are made with new soft leather which expands with the fermentation of the wine. Old wine skins hardened (loose elasticity) so they would burst during fermentation. Matthew 9:17, Mark 2:22 and Luke 5:37.

If you did research you should have definitely sought the original terms via a concordance in my opinion you can't do deep research without it. But the word "wine" many times is reference H3196, or H8492 look them up for clarity.
