LAY HO MA (how's it going in Cantonese)! When one thinks of curry, it may drum up feelings of laborious work. Join me in this episode and learn how to make the most amazing Thai style Eggplant Green Curry recipe today! Let's begin!

Ingredients:
1 1/2 cups jasmine rice
1 1/2 cups water
2 Asian eggplants
2 tbsp avocado oil
400ml can coconut milk
3 tbsp green chili paste
1 red chili pepper
1/2 cup canned bamboo
1 cup baby corn
1/2 cup edamame
1/2 tbsp soy sauce
1/2 tbsp maple syrup
Thai basil to serve
1/4 cup pomegranate seeds

Directions:
1. Add the jasmine rice to a small saucepan. Rinse and drain with some water, then add 1 1/2 cups of water and heat on medium high. When the water begins to bubble, give the rice a stir. Then, cover and cook on medium low for 15min
2. Slice the Asian eggplants in half and then into quarters
3. Heat up a sauté pan to medium heat. Add the avocado oil followed by the Asian eggplants. Sauté for 4-5mins to colour the eggplants
4. Make a well in the middle of the pan and add in about 2 tbsp of the cream from the coconut milk and let it melt
5. Add 3 tbsp green chili paste and sauté for 4-5mins
6. Slice the red chili pepper in half and add to the pan along with the bamboo, baby corn, and edamame. Sauté for about a minute
7. Add the coconut milk, give the pan a stir, and bring to a boil. Then, add the soy sauce and maple syrup. Give the pan a stir
8. Cover and cook on medium for about 5mins
9. Plate the curry and garnish with fresh Thai basil and pomegranate seeds. Serve with freshly steamed jasmine rice and enjoy!

Excuse my long message, wanted to post it private but thought it is ok to share my experience with your audience. First big thank you. I am a pensioner and do not interact in social media, only watch YouTube. At this point in life, after hating cooking all my life, you got me interested and motivated. My partner and I enjoy every single dish we have tried from your channel. We have watched how you managed to get where you are, and you deserve success and more. I discovered Oriental food when my profession took me to London, where I lived 24 years and Chinatown was near my office so you can imagine. Had to relocate when I retired. I liked to watch chef's channels, but for someone that disliked cooking, it was too much to even try. A few months ago I came across your channel, the explanations were simple and clear. Where I live it is difficult even online to get all the ingredients but there are replacements. My partner is an excellent cook, and now, after many years, we both can enjoy trying new flavours with your dishes. We are not vegetarian but your recipes can be adapted. Your modern and simple approach has made it so appealing that I am now looking forward to trying more and more of your recipes. And for us, old now, your food is very healthy and balanced, another reason why we are sticking to it. Yes, I like cooking now. We managed to get most of the spices so that I can make the absolute unavailable sauces. OMG that incredible chili oil that now I use even for a fried breakfast is here to stay. The flavours that I thought were gone forever, I can enjoy them again. And wanted also to say I would be very interested in a dish that is like korma. I loved the masala and korma curries. If you ever made a video with a korma taste I would be most grateful. Your bean soup is a regular household dish, filling and healthy. I made this recipe last night. My reed roofer came late in the day to fix a leak around the chimney (my house is from 1820 with a reed roof), then came into the kitchen for a cup of tea and exclaimed: it smells so good here. I told him it was my dinner, it was quite spicy and then: would you like some. Yes, please! He ate all I have and I hope the bill for the repair will benefit! I live in a small village in Northern Germany, not known for the love of spicy, exotic fiood. I shall make anothger one of your recipes tonigh, this time for myself.

Inherited my first Vitamix from my grandmother who bought it back in the 60’s, at the Cleveland Home and Flower Show!! It was all stainless and had a reverse blade feature. I bought a new one a few years ago…but it was NOT because the old one didn’t work! Love the new one, with one exception. I find the faceted container harder to clean than the straight sided stainless one.
But…it’s still the best product of its kind on the market. I am
From Cleveland, originally, and so proud that’s where they come from! Along with Paul Newman…2 of our best exports! 😃

Wow! Vitamix is one of the most elite machines a home cook can own! I dreamed of owning one in the 80s but I was under employed. I have one now and it’s beautiful and awesome. You must be a great chef to have their sponsorship! I love your narration!

I inherited my mother’s Vitamix she got in 1970… a model 3600 that still works great! Designed for power and not smooth or quiet operation, it’s not for the faint of heart. I use it for heavy lifting like grinding wheat. I know its reversible motor can slam soup ingredients together with enough force to heat it to piping hot but it takes a bit of muscle to keep the entire mixer from flinging itself through the wall. This creamy curry will be child’s play! I can’t wait to try it! 😂
