Ultra definitely more versatile in different conditions and zoom capability. And lets not forget this is a day 1 S24 Ultra, lets wait after 2-3 months of update in the software and maybe the camera can even be optimized and refined. I think that’s a more fair comparison to the Iphone 15 Pro Max.

The S24 Ultra looks crispier and with more details, we can clearly see in the first picture the details on the right the bridge behind the tree branches is clear and detailed and we can clearly see the true color of the stone apart from the fence in the front, where on the iPhone 15 Pro Max looks much more faded

The camera software is in early versions on the new S24 Ultra. I am sure they will even further enhance the software to match the hardware with future updates. Exactly as they done on the S23 S22 etc. Soon as they work out all the bugs in the camera system it should be even more impressive!
