Hey Jon, opening/closing the HiHat is actually a common feature of Drumsamplers. So, if you are looking for such sounds, check out the Drum-VSTi´s used in Rock/Metal etc.

you should use diffusion so theres zero room sound being recorded into the mic man. rockwool will reflect the upper highs easily as well as the fabric . i would add diffusion on the back wall and sides and corners for a clean sounding room :)
