Ingredients
1. Radish (any variety is fine)
2. Star anise
3. 2 cups of water
4. 2 cups of vinegar (I used rice vinegar, feel free to use any type of vinegar)
5. Fresh rosemary

Instructions
1. Prepare pickling solution by adding vinegar, water, and star anise in a pan.
2. Leave to cook on low -medium heat for five minutes.
3. Set pickling solution aside
4. Slice radish lengthwise (into 2) and slice into quarters
5. Transfer sliced radish into the jar, and add sprigs of rosemary or any herb of your choice
6. Add pickling solution, ensure that radishes are fully submerged in the pickling solution
7. Seal the jar tightly and transfer it to the refrigerator when completely cooled down.
8. It can be consumed immediately, but if you want a flavourful pickled radish consume it after 24 hours

***pickled radishes can last in the refrigerator for up to 6 months
****Remember to always wash your hands and utensils before pickling

I love picked radish! My mom never used salt, but she did use only about a heaping teaspoon of sugar.
