THREE MUST TRY RIB RECIPES FOR THE KETO & CARNIVORE DIET

If you are on the keto or carnivore diet and you are tired of burgers and steak, then you need to add these recipes for beef and pork ribs to your meal plan. In this video, learn how to cook pork ribs in the slow cooker for fall off the bone, juicy ribs. Learn how to smoke beef ribs on the Traeger or pellet grill for beefy, full flavor smoked beef spare ribs. And learn how to braise short ribs in the oven for tender, delectable ribs.

These keto rib recipes can be made year round and are designed for those with busy lives and want a home cooked meal. We like to make these rib recipes when we need to break up the monotony of hamburger meat and steak.

These recipes are easy to customize to fit your dietary needs for a strict carnivore diet, where you just add salt and animal fat. Or you can customize the ribs to fit a keto diet with added herbs and other low carb vegetables.

SLOW COOKER PORK RIBS
1 rack pork ribs
salt, pepper, garlic salt for seasoning
1/2 cup apple cider vinegar

Remove the membrane of pork ribs if needed or desired. To do so, take a butter knife and slide it under the membrane next to the ribs to form a pocket. Then slide two or three fingers under the membrane to create more space. Using a paper towel for gripe, hold onto the membrane with the paper towel and pull off the membrane until it is completely removed.
Generously season all sides of the pork ribs with salt and pepper (if using).
Pour apple cider vinegar to the liner of the crock pot.
Add pork ribs to the liner of the slow cooker. Let the ribs sit upright on its edge with the meaty portion up against the liner. This will help give the ribs a nice golden crispy exterior.
Cook on low setting for about 6 hours.

SMOKED BEEF RIBS
3 pounds beef ribs
generous amount of salt for seasoning (option to use garlic salt and pepper)
1 cup beef bone broth
1 tablespoon apple cider vinegar

Season beef ribs generously with salt on all sides.
Turn pellet grill to smoke and let run with the door open until all the smoke has cleared. Then add beef ribs to the grill. Close and let smoke for 30 minutes.
After 30 minutes, turn the heat to 250 degrees and let cook for 2 hours.
Combine the beef broth and apple cider vinegar in a spray bottle or a small bowl. After 2 hours, spray or baste the ribs with the beef vinegar mixture until coated. This will help keep the ribs from drying out. Continue to spray or baste every hour to rehydrate the ribs.
Continue to cook the ribs until the meat pulls away from the bones and is tender (about 6 hours).

BRAISED SHORT RIBS
4 pounds short ribs (about 8 ribs)
generous amount of salt for seasoning
1 tablespoon garlic sauce, optional
2 cups chicken bone broth

Season short ribs generously with salt on all sides. Let sit for at least 30 minutes to allow for salt to absorb into the short ribs. Preheat oven to 325 degrees.
Add your favorite cooking fat (lard, tallow, duck fat) into a large dutch oven and heat over medium-high heat until hot. Working in batches add in 3-4 short ribs and sear on all sides for 1-2 minutes each side until a golden brown crust appears on all sides. Be sure to work in batches to eliminate the steaming effect that may occur if they are too close together. Steaming will keep the meat for forming a nice crust which will lock the flavors and moisture inside the short rib.
Add ribs back to the dutch oven and add garlic sauce if using. Pour in chicken bone broth and bring to a boil. Remove from heat and put in a 325 degree oven for 1.5 to 2 hours or until the rib meat has pulled away from the bone and is fork tender.

what i like to do is use my nearly carb free taco seasoning, rub it all over the ribs and bake in the oven, then baste with a taco sauce. most taco sauce is low carb. like 2 grams per 2Tbs serving but if you use taco bell sauce it's zero carbs it basically has zero everything but sodium. here is my low carb taco


2 tb chili powder
2 tb ground roasted cumin
1 tb smoked paprika
1 tb fine ground himalayan pink salt
1 tb dried minced garlic
1 tb dried minced onions
1 tsp mexican style oregano
1 tsp coarse ground black pepper


most taco seasoning has flour in it to thicken when used.
