Making chai is easy. Dump in the ingredients and ya boil. But the biggest mistake that I used to make was not boiling enough! Don't stop boiling until it's dark brown 🟫. The darker the more flavour and aroma in your chai.

CHAI RECIPE
📋 Ingredients
- 1 mug of full cream milk (cheaper milk in the supermarket won't cut it, you need to buy the most natural and unprocessed milk you can find. Ideally Buffalo milk if available.)
- 1 heaped tsp white sugar
- 1 heaped tsp black tea (Tata Gold, Taj Mahal, Tapal Danedar).
- 1 crushed cardamom pod (optional).

👨‍🍳 Recipe
1. Bring milk to nearly boiling. Stir so it doesn't stick to the bottom of the pot.
2. Add sugar & optional cardamom. Stir while it's dissolving.
3. Add tea. Stir and let it boil up 3 or 4 times (or more! It needs to be dark brown 🟫).
4. Pour from a height through a strainer to get those creamy air bubbles on top.

As a tea lover myself, lemme tell you an additional simple tip which makes the chai so much more aromatic and tastier. Once boiled, cover the pan with a lid for about 3-4min. And there you have it. Its probably the pressure of the steam, but makes a huge difference

Instead of putting all the ingredients together dump all the dry ingredients with water and boil it after sometime add milk you will see the colour change and you will get the taste and aroma aswell.

Delicious but there needs to be a right balance between the amount of leaves and the amount of time to boil. If boiled for too long, the chai can become bitter too. But there’s no wrong answer when it comes to Chai. Everyone, even people in one family can have different tastes. Lots of love from New Delhi, India.

Love Chai
My Indian chef introduced me to it
Working long days in the kitchen there were plenty of times we didn't get to eat. He would knock up a 500ml measuring jug for me it always picked me up.
He taught be how to make it and the importance of bring back up to the boil multiple times
He used to make Jalab balls and Chai plus many different curries for the Indian buffets I gave him free reign on

I do it differently. Milk is the last thing I put in.
I boil the tea in water at slow temp first and let it go black and strong
Then I put the milk in and just do 1 boil.
I like to have a bit of raw taste of milk in my strong tea. Wakes me right up

Us Iranians love our chai as well, although we don’t boil ours. We brew it using loose tea leaves, and usually we mix several different teas together. Similar with Indian chai, the longer we brew it the darker and stronger it is. And we love our chai black, and a lot of people will have it with something sweet
