The way his adorable dogs carefully supervise and watch him while he's cooking is so sweet. Dogs are so loyal. Also this was my reminder to buy a wok. I have noticed in the past that some are labeled "seasoned" and some are not. I don't know if there is a specific brand that is best though. But I should buy a good one. Actually I think that would be a great idea for a video or video series. Meaning which are the best woks that you'd recommend? What brand has the best knives that you'd recommend? I've watched American Test Kitchen videos advising on not to buy chicken stock/broth because you're just buying the container, the seasoning and the added water. But instead to buy Better than Bouillon. I'd watch a series like that on woks, knives, pots and spices. In the household I grew up in we never used spices like star anise or cardamom. So I'm learning how to use them now. We did use paprika, salt, pepper, oregano, bay leaves, Lawrys, garlic powder and onion powder. So we did eat seasoned food though. My point is I'm pretty sure I'm not the only one learning how to use additional spices, pots, utensils and make dishes that I didn't grow up eating.

Is there a way to prepare purple eggplant so it retains that bright color? I always buy beautiful purple eggplant and it turns to a dull brown/black while cooking

I soak my eggplant in water for at least 15 minutes, depending on the size of course. it soaks up the water and once you’re cooking, it can’t soak up the oil. Just be careful that you keep an eye on it as you don’t want it to go soggy.
