Next week I’m taking two packer briskets and splitting the points from the flats. The points will become burnt ends, the flats will be brined for a week. One will be smoked for pastrami and the other boiled for corned beef. Your sauce sounds great for the points.

and here I thought burnt end where made from the point... after you cooked the flat to perfection removing the point and dunking it into some bbq sauce cooking it a second time... still looks amazing though

I was so sad to discover that Lee & Perrin's pepper sauce is no longer made. Love the worcestershire sauce but always got the pepper sauce too. :(

I would never ever dare to put a brisket straight on the cast iron grates of my MB800 especially running at 143 C°. They tend to get much hotter and I can def see how it made the bottom of your brisket very crispy. Wonder why you decided to do it.

Hey Pitmaster...question for you. Most folks can't afford to buy all the different barbecues and smokers you have. If you have to advise on one that can give you the most versatility in terms of barbecue and smoking, what would you say?
