Generally we don't use cream for carbonara. In the past(decades ago) cream wasn't used on a daily basis(or it was very expensive) because you couldn't keep it fresh and cold, there weren't no refrigerators back then so in the original recept there's eggs, parmigiano.. in it but no cream. Thus of my conscience and I'm Italian.

I’m with him on this one. Carbonara sauce is egg and the cheese. No cream. That’s a whole different recipe from a proper carbonara. It’s like having a full English but with hotdogs instead of sausages, it’s just not right
