With a huge amount of mint growing on the allotment and a bag of windfall apples, I decided to make mint jelly.

I don't know what she did but I covered mine after I had mowed it off, with green bark chips from the local sawmill. I thought nothing could permanently kill mint. Turns out I was wrong! 😂 However, I was thrilled because I really hated my mint at that spot. I started a new patch at a much better place and no longer use green bark mulch! 😂

Hi Jonathan,
I really love your videos and admire your cooking gear a lot. I am trying to get rid of all my plastic stuff and get steel versions of everything to minimize chemical impact while cooking. Now I just noticed that the cooking pot you use looks like it is made from aluminium. Is that right? If it is, how do you keep the aluminum from reacting with the fruit acids?

I like this recipe, but did I miss the pectin or gelatin part - do you need thwt for this recipe?

Not sure what good mint jelly is except for lamb which I don't eat, but a small tiny tip. Check around and see if anyone has a baby. you can use those glass baby jars to store the extra jelly in, or if they seal good, save them for christmas as gift basket goodies. We do that with applesauce and pickled spiced peaches.
