This easy mint jelly recipe is delicious!
The recipe is below
1 packed cup mint
1 cup boiling water
4 cups natural apple juice
2 Tablespoons lemon juice
3 Cups sugar
green food coloring
Gather mint, pour boiling water over mint and let soak 60-90 minutes.
Combine mint, juice, lemon, and sugar in pot over high.
Stir to dissolve sugar. Bring to rolling boil and cook to gel point (220 degrees F) When jelly has thickened, add drop of green food coloring and remove from heat.
Fill jars!

G'day.
I'm a retired chef and I was always told when I was an apprentice that people eat with their eyes too.
Food colouring is a must for me. It's just pretty and inviting and really gets the whole mint theme in your head.

I used to make mint jelly and I loved it best on toasted English muffins with melted butter on top, then the jelly 😋. Good stuff!!! Glad to see someone else enjoys it too 🙂

YUM!😋 I think that's so awesome!!! I like the apple juice recipe, I think because I like the taste of the apple with it. The one I made isn't made with lemon juice or apples, but it still has a tart, lemon like flavor from citric acid. I plan to make thumbprint cookies and fill them with different jellies, like mint, and do something for the holiday season this coming Winter. I have to add the food coloring to mine. If I don't, people will think I'm trying to give them jars of spoiled food or something 😂

Why not throw the leaves into a food processor after soaking to fix into the jelly?

This might be a stupid question, but is mint water really strong enough that only half a cup of it will overpower the flavor of four cups of apple juice and two tablespoons of lemon juice?

Do you realize you put rice in the recipe instead of mint? Lol

Looking forward to trying this, I made mint jelly before, but with citric acid, it was good. I think the addition of apple juice will make it more versatile. I’d like to use it with toast in the morning, as well as with meats.
