For a marinade you always put the oil at the end . If you put it first, the spices and the lemon juice will get blocked by the oil as meat will be coated .

amazing recipe .. a small tip i would and am going to do is save the juice from the pan after i flip it .. i would put the meat flipped over back in the oven for about another 10 minutes on the highest setting to toast and crisp up the outside up .. then chop it up mix back in all the juice

I did this just today. I used a marinade from thatdudecancook which has the same spices and a few more including yogurt, and I used the loaf pan. Had A LOT of liquid, but it’s one of the best things I’ve made in a while, and that’s saying something. I did a portion for a quick dinner which marinaded for 2-3 hours, and I’ve got another portion in the fridge for after 24 hr.

I would bake it for a shorter time in the loaf pan, flip it and bake or grill it a bit longer. That way you can have more crispy peices

Buy a spike, place it in a snoker and slow cook it, it will be 1000X better with the smoke, the slow cooking will make it super tender as well

I do this. It works well with a 50/50 beef and lamb mix. I've also used elk, venison and bison. Great for doner kebab or gyro. So delicious. I make homemade flatbread too.

Delicious recipe i made it it was full of flavour enjoyed the lemon tang to it. I added garlic powder instead of fresh.
