Josh’s mantra with cooking is definitely something I aspire to. He’s constantly up to some sort of unique or chaotic ideas and loves pushing the envelope with the possibilities, but has achieved that at least in part to a love, appreciation and dedication of all sectors of culinary arts, learning the niche of all types of cuisines while still having fun and doing his own thing along the way. I just love it

The town I work in has a lot of street vendors in one area for students and construction workers, and I remember seeing this one guy's taco cart that barely anyone visited. Decided to give it a shot, and I remember being somewhat impressed with his showmanship. Wasn't world-class, but the way he flipped, tossed, and juggled everything was pretty neat. I walked away with my food and thought "I wonder why he gets so few customers?"
Then I tasted it and was like "Oh, it's because the other taco cart makes way better food."

I'm a Mormon, but from New York, so I don't usually get exposed to Utah stuff. Recently a senior missionary family at our church made Hawaiian haystacks for us. I didn't know what to expect, but it was surprisingly good. A very odd kind of Americana dish, but full of gravy and carbs and meat and just generally delicious. The customization helps a lot too, so you don't necessarily have to put on everything, you can just have the chicken rice and gravy and that'd also be fine!
