Smoked Mackerel Fish In Tomato Sauce better than canned mackerel
Ingredients
Garlic infused oil
3 cloves of Garlic
Dried thyme
Garlic granules
Crushed black pepper
Salt
Tomato base (tomatoes, 1 large bell pepper, 1 bulb of onion, spring onions, ginger and 1 scotch bonnet pepper for some heat)
Smoked mackerel fish fillet (extremely flavorful and rich in omega-3 fatty acids which are heart healthy, very important for heart health)
Instructions
Start with oil in a preheated pot, add 3 cloves of garlic, dried thyme and lightly caramelize them, then slowly add tomato blend, season with crushed black pepper, garlic granules, salt, seasoning cubes, stir to combine evenly, cover completely and allow to cook on medium to low heat for 10 to 12 minutes.
After about 12 minutes, add pieces of smoked mackerel fish fillet to the cooked tomato sauce, submerge all the fish pieces, cover compeletly and allow to cook some more on low heat for 7 to 10 minutes. After 7 minutes stir, taste, adjust the seasoning if needed and allow to cook for 3 minutes.
Serving this flavourful smoked mackerel in tomato sauce with boiled yam and steamed Amaranth Green from EsteeLicious Garden.
