John I'm from Rome! Your pronunciation of Cacio and Pepe is adorable. I have an advice: salt the water once it's already boiling, otherwise it takes more time for the water to get to boiling temperature. Your version with butter reminds me of pasta al burro, a beloved childhood dish for many Italian kids because of how simple and delicious it is.
For anyone who wanted to keep it more traditional, you should cook your pasta in fewer water so the water you add later is filled with starch, wich allows for a better cheesy cream to form, so you wouldn't even need the butter!
Sometimes, I think that is the only case, we don't salt the water for this pasta, because Pecorino Romano is already very salty on its own! Know your cheese and decide accordingly.

I knew you were going to bloom the pepper in the butter as soon as I saw you melting it! I do Cacio e Pepe very similarly to the way you do it, but next time I do it for myself I'm going to try the pepper in the pasta water and browning the butter. One of the nice things about this dish is how it makes you feel warm inside.

My grandma are a version of this but added a dozen eggs and baked it in a Pyrex 12x9 glass pan. It’s called Pastiera and a staple at an Italian Easter dinner. Yummy served hot and extra yummy cold the next day! By baking the pasta gets crispy on top. So

A few weeks ago I made a dish similar to this but I sautéed mushroom and adding at the end with some heavy whipping cream. This looks like it would also be a great base recipe for some amazing sauces. 😋😋😋😋😋

Always wanted to make this but didnt because all the recipes I looked up said to use lightly toasted Talicherry pepper I think it was called .. Which of course I couldn't find! Glad to know I can make this with regular pepper!
