Place some peeled garlic cloves in a Mini Cocotte, then add olive oil until the garlic is just covered. Add a sprig of fresh thyme, season with salt and pepper, and give it a stir. Cover the cocotte and bake in the preheated oven for about 2 hours, until the garlic is golden and very soft. Let cool to room temperature before serving.
