I have never canned anything before, so I decided to try out the (easy) Italian way to can tomatoes from my garden.
Will it be a success or a fail? Watch to find out!

Update:
There are SO many ways to can tomatoes. In my video I’ll show you how to can the “easy” Italian way with no spices or vinegar necessary.
If you’re like me you’ll have too many tomatoes ripen at the same time - and you’ll want to preserve them so they last just a little bit longer… this is the way to do it.
I’ve sampled the canned tomatoes from this video and they sealed and kept in the pantry for over a week. They were absolutely delicious.
I would not recommend this method if you want to preserve for more than 6 months.
This is for quick preserve & quick use!

Such beautiful tomatoes, yum. Also just love the video with your lovely chickens and roosters. They are loving those tomato bits. Thanks for showing your canning technique. Love it. I used to can years ago using this method. Also canned peaches, applesauce and even made pickles one year and canned them.

So glad to see that you are learning and inspiring others. Jars seal as they cool down... that's when you hear the 'pop'. Rings should be tightened 'finger tight' before water bathing and taken off once the jars are completely cooled and have sealed. This will prevent and expose a 'false' seal.

It has been great watching you with all of your seeding, gardening, harvesting and now preserving "Firsts" this year! I had the opportunity to do this with my grandmother's mother and now for myself with my daughters. What a beautiful and energetic experience that you are in! Your tomatoes are beautiful! However, I have some canning tips for you and your followers: 1. Canning jars should never go directly onto the bottom of a pan. They should go on a wire rack, to keep the jars from breaking. 2. You cannot safely can tomatoes in a hot water bath without adding either lemon juice or citric acid. I strongly recommend buying the Ball Blue Book which shows everything to safely can your produce. 3. You had too much head space in your jars. There should be 1/2 inch headspace. 4. You probably should have put boiling water in your jar to get it up the the proper headspace. With too low of headspace, you risk lids not sealing or food spoiling. I didn’t watch your video to the end to see what your processing time was, but for quarts would be 45 minutes once it comes to a boil. Also water should be 1-2” above the jars. I appreciate that you are enthusiastic about preserving your tomatoes, but I think it is not good to teach people improper canning methods. Sorry to burst your bubble, but I need to say this for safety’s sake.

I would use a jar clamp to lift the jars from the hot pot. The salad tongs idea isn’t good as the jars can slip, I have discovered. I broke a glass container once.
