Adonis Cake from My Beef With Meat

Adonis cake is dark. Moist. Delectable! Audience member, Cara Hunter, forced my hand in making the Adonis cake from the book, My Beef With Meat. I did make a few adjustments to the recipe. Check it out.

CAKE
1 1/2 cups whole wheat pastry flour
3 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
2/3 cup evaporated cane juice sugar
6 tablespoons unsweetened applesauce
1 tablespoon natural rice vinegar
1 teaspoon vanilla extract
3/4 cup cold water

FROSTING
1 (12-ounce) package silken tofu
3/4 cup dairy-free, semisweet chocolate chips, melted
1 tablespoon vanilla extract
2 teaspoons chia seeds

I made this! It was phenomenal. I used WW pastry flour, and then lined the pan with parchment paper for baking. The frosting was great, I loved the addition of the chia seeds. Very pudding-like and thick.. The finished cake was moist and lovely. Thank you for sharing this nice recipe!

Jill thanks for your video. FYI...there is no need to add chia seeds to thicken the frosting. Ann and Jane Esstelstyn did a video and Jane shows how she puts the silken tofu under towels (under and over it) then weights the towels down. The towels absorb tons of the moisture and make the tofu like the texture of cream cheese. The results is a VERY think moose. I think I will maybe even add a little maple syrup to loosen it up and sweeten it up. Thanks again!

I made it with one cup graham flour and 1/2 cup almond meal just for health. If this was for a special occasion I would use a lighter flour. I had no applesauce so processed some dates and a couple figs with water. The cake is fudgy, moist and wonderful. I also used maple syrup and just a touch of molasses. The frosting was OK as a pudding. I'd rather just have some high quality jam or nothing on the cake. I baked this recipe as cupcakes. I will freeze to have as treats.

I am making your Adonis recipe this weekend for my granddaughter's birthday but will make two layers and raspberries in the center with Marionberry jam and the icing just outside. Will let you know how it works out.

I TOTALLY agree, Jnooe99! I've been working on that, slowly but surely. Did you watch the Apricot Bread vid? I used a glass 9 by 7-inch glass dish to bake it and it just fell right out. LOVE IT. I'm also working to replace my aluminum pots with the green ceramic ware. I have a BIG green wok-like skillet that works beautifully for water-frying.

im so glad the cake doesnt have soy my husband is allergic to soy i will just put the chocolate by itself on the cake

I just made the cake, and it's flavorless and dry. I followed the recipe except for a few substitutions. I think whole wheat flour overpowers baked goods. There is a reason bakers use cake flour and white flour to bake cakes. I used 3/4 cup whole wheat and 3/4 cake flour, but I'm guessing the WW just overpowers everything else, because it had no flavor. There was also a subtle taste of vinegar, and I used a scant one tablespoon. i really don't want to be sitting there when my guests bite into this and taste vinegar! I also used white sugar since I don't know where to buy cane juice extract sugar except for Whole Foods and I don't shop there on principle. And I'm sure I'd never use it for anything else. Maybe the frosting is so rich that it can carry the actual cake. When I get to the store to get some tofu, I'll try it. There's only one plant based blogger that can make a decent chocolate cake that I've tried, and that's Voisin at Fat Free Vegan. After trying this cake, it's definitely not "Rip." I wouldn't serve this to my dog, let alone to dinner guests. Ingredients for "plant based" desserts tend to be really pricy (this cake only makes one layer), and I'm more inclined to bake "regular cakes" and cut up the slices into 200 or 300 calorie pieces and freeze them and eat them occasionally. The only successful plant based desserts I've ever eaten are fruit based, like cobblers, because you can't really go wrong mixing oats with fruit. Chocolate and baked goods are just a different animal, maybe the plant based gurus should just acknowledge that and stick to fruit based desserts. I do like Voison's chocolate cakes, though.

It only makes one layer? That's a lot of sugar for a one layer cake. I'd just use white sugar, the natural cane stuff is too pricy. You can put parchment paper or wax paper in the bottom of your cake pan. Cut in the shape of the pan bottom with two "handles" that stick over the edge so you can lift it out. I can't stomach chia seeds, all these products I would never use so it would be an expensive cake! I would use the whisk attachment on my immersion blender to blend the "frosting."

I have no non-stick cookware in my house. It's all nasty, and toxic. The plastic coating leaches a myriad of chemicals into your food and why would you want to put that in your body. In my home we have well seasoned cast iron, and for baking I use stainless steel with parchment paper. If I'm baking cooking I use a silpat sheet on my trays, which are the best invention since sliced bread.

So, if you really are about your family's health you will toss out all of that non stick cookware, or give it to good will. Then just buy stainless steel pans an a few rolls of parchment paper.
