The method is the easiest I found and with the highest success rate.
Though we must give the Rice extra time to be cooked or cool down :P, the operating time is even less than 6 minutes.
I hope that I have explained every detail and I really hope you can enjoy the naturally sweet taste of the traditional rice wine.

In my country we call them Tapai or our neighbors call them Tapuy. Eaten together with rice they are amazing!

Very nice video! Just one question: How can the Rice Leaven you use produce alcohol considering that it doesn't contains yeasts? Does the fermentation happens because of wild yeasts that naturally live in the air?

Will try this today. The only question I have is the ratio of drinking water to rice added to start the fermentation process. If the ratio is 1 to 4 that would mean 50 grams of water to 200 grams of dry rice, not 25 grams.

Sounds like a very nice method, I’ll try that out. You say “eat it” quite a lot, does it mean you eat the fermented rice as well? That’s quite unheard of.

I was just wondering how much liquid/rice wine (in ml or grams) you get from the total mixture you used in your video? (490g total I think)

I want to cook with it rather than drink it, although curiosity it say I will definitely try it! :D
For cooking wine, how much longer should I leave it to ferment for do you think?

I truly enjoyed this video. Also, you sound so so lovely...
The one mystery of rice wine which I am trying to solve; many recipes Do Not add water to the mix, the only water used was to cook the rice. Your recipe adds water after cooking. I wonder if temperature/climate has anything to do with that?
