As soon as I saw the 15 hour potatoes over at @emmymade I knew I had to try a plant based version of it! I wanted that richness of duck fat, but without the duck.. so here it is the crispy potato stack, 15 hour potatoes made in 20 hours, the best fried potato recipe I have EVER had... 15 hour potatoes but better!

Potatoes are life so I am all for such recipes. I've seen this concept before (this is a technique well known if French cuisine and many chefs like it) but my gosh, you made it so awesome! I'd have never come up with the ideas you've used to make it super flavourful on my own! I bet these were absolutely delicious, comforting and impressive! A perfect show-stopper :D

My Mom learned to cook from her German raised mom. A family favorite was porkchops and scalloped potatoes. For the scalloped potatoes mom used thinly sliced potatoes interspaced with condensed milk and a light sprinkle of flour. It was somewhat like potatoes au gratin.
