Simple dashi in a dash-y 🏃‍♀️

Are you ready for the next okonomiyaki 🥞?

10g kombu (dried kelp)
20g Katsuobushi (dried and smoked bonito fish flakes)
1 litre of cold water
 
Soak the kombu in the water for 30 minutes, then place the saucepan over a low heat. Bring to a simmer then take off the heat and stir in the bonito flakes. Leave to flavour for 10 minutes, then strain through a sieve into a container. Discard the kelp and bonito flakes.
