Creamy Tiramisu | Tiramisu with Baileys and Dark Rum

The classical Tiramisu uses Marsala wine but due to unavailability in India I've added different ingredients to get the authentic flavor. The process looks elaborate which it is, but it's too easy and enjoyable to follow.

Ingredients:

For the coffee mix:
60 ml espresso
60 ml water (boiled)

If you want to use instant coffee instead...6g/2tsp instant coffee
120ml water]
16g/4 tsp sugar
30 ml dark rum

For the cream:
3 egg yolk
Sugar syrup (40 g sugar + 20 ml water)

100 g cream
250 g mascarpone
20 ml Bailey's irish cream/Amarula coffee cream

3 egg whites
1 tsp powdered sugar/ 2 tsp regular sugar

Savoiardi/sponge finger biscuits
Unsweetened cocoa powder (for dusting)
Dark chocolate (optional)

✓If you want to avoid eating raw egg whites, you may skip using those, instead double the amount of fresh cream.
✓Do clean the beater properly before using in egg white, even a drop of fat might result in poor foaming.
✓The size of container I'm using is 7.5x5 inches.
