Soya has a very thin layer of trypsin inhibitor that is not visible to the naked eye and that prevents the protein from breaking down into amino acids. Hence fermentation overnight is necessary to remove that layer

Soybeans do contain anti nutrtients which can be reduced to a good extent by soaking them in water . The soya chunks found in market such as nutrella, fortune, etc, are already processed in the factory which removes the anti nutrients . Not to mention the soya chunks are defatted which reduces their fat content to a good extent . One can consume soya chunks without much guilt .

Soya chunks are made from defatted soya flour which is already highly processed, & has very less amount of nutrient inhibitors (anti-nutrients). & Many people eat soya chunks after properly cooking them so the anti nutrients are reduced to very minimum levels that it won't inhibit protein absorption anymore.

My boyfriend’s grandmother is 96, and she is vegetarian for more than past 40years now, and her regular diet consists a good portion of soya chunks. She has no health issues.
